    Equipment

    • 1 saucepan
    • 1 potato masher
    • 1 8X8 casserole dish lightly sprayed with cooking spray
    • 1 Mixing bowl

    Ingredients

    • 1 lb. sweet potatoes equals two large or three medium-sized sweet potatoes
    • 1 cup sugar
    • 1 egg
    • 1 tsp. vanilla
    • 9 oz. grated coconut equals ½ can of shredded coconut in a can
    • ½ tsp. salt
    • 1 cup sweet milk

    Topping

    • 1 cup sugar
    • 2 tbsp. cornstarch
    • 8.25 oz. crushed pineapple
    • 10 oz. Maraschino cherries

    Instructions

    Sweet Potato Filling

    • Preheat oven to 345°.
    • Place potatoes into a saucepan, cover with lightly salted water, and bring to a boil.
    • Reduce heat to medium-low and simmer until tender, about 20 minutes; drain, and use a potato masher to mash.
    • Add 1 cup sugar, 1 egg, 1 tsp. vanilla, shredded coconut, ½ tsp. salt, and 1 cup milk to the potatoes; mix well.
    • Pour into a lighted greased 8X8 casserole dish and bake for 45 minutes.

    Topping

    • Mix 1 cup sugar and 2 tbsp. cornstarch in saucepan.
    • Add pineapple and cherries (with juices) and bring to a boil.
    • Boil for two minutes then pour over yams.
